Courgetti Pasta Recipe (No Carbs)

My sister and I have started a workout regime. I personally have put a lot of weight on (around a dress size & 4 inches around my waist). No one else can do anything except myself. So after completing a back and cardio workout (rowing machine) we were so SO hungry.

We went to Tesco and bought freshly made hot &spicy chicken thighs (which only cost £2 for four). When we got home I rustled up a quick non-carb lunch which took 10 minutes (prep and cooking). It was SO tasty and filling. Please see below for the recipe.

Courgetti Pasta Recipe

Serves 2

Ingredients

  • 1.5 courgettes, using a spiralizer
  • 1 tsp of Schwartz garlic Italian herb & spice blend
  • 2 tsp rapeseed oil
  • Two whole tomatoes, cubed
  • 1/4 Cucumber, cubed
  • Handful of spinach leaves, roughly chopped

On a medium heat, in a small pan, add the oil. When it is hot add the courgette, tomatoes  cucumber, spinach leaves and herbs

Cook until it has cooked down, reduce liquid by half.

I de-boned the chicken from Tesco and removed the skin.

It was then placed ontop of the Courgetti. Serve hot

What do you eat after you have worked out? Have you ever tried spiralised vegetables, if so how do you eat yours? I will review the spirilzer I used in this post next week.
